Grilled Oysters with Pesto

Grilled Oysters with Pesto large icon If you don’t like the idea of eating something so fresh that it’s actually still alive then this recipe is perfect. Its very simple to prepare and tastes wonderful, great as a canapé!

Ingredients

  • Some Live Oysters (3 – 10 per person)
  • 1g Parmesan Cheese per oyster
  • 1 teaspoon Pesto per oyster
  • Preparation Time: 10 minutes
  • Cooking Time: 2 minutes

Method

  1. Make the pesto, then heat the grill to its maximum setting.
  2. Shuck the oysters. the shucked oysters
  3. Place the oysters onto a baking tray. Put 1 teaspoon of pesto onto each oyster and spread it over, then sprinkle about 1 teaspoon of grated parmesan over each oyster. dressing the oysters
  4. Put the oysters under the hot grill for about 2 minutes, until the cheese has melted and is bubbling.
  5. Place the oysters onto a plate or serving platter and serve right away. the finished grilled oysters

Useful Information

Can it be Frozen? No.

Can it be prepared in advance? No.

Will leftovers be nice? NO!!! Do NOT eat leftover oysters!!!

Notes

  • As with any seafood, you must make sure the oysters are very fresh and they must still be alive.
  • The lemon and basil in the pesto really compliments the flavour of the oysters without masking it.
