Grilled Oysters with Pesto

If you don’t like the idea of eating something so fresh that it’s actually still alive then this recipe is perfect. Its very simple to prepare and tastes wonderful, great as a canapé!
Ingredients
- 3–10 oysters per person
- 1 teaspoon freshly grated parmesan cheese per oyster
- ½ × pesto
Preparation Time: 10 minutes
Cooking Time: 2 minutes

Method
- Make the pesto, then heat the grill to its maximum setting.
- Shuck the oysters.
- Place the oysters onto a baking tray. Put 1 teaspoon of pesto onto each oyster and spread it over, then sprinkle about 1 teaspoon of grated parmesan over each oyster.
- Put the oysters under the hot grill for about 2 minutes, until the cheese has melted and is bubbling.
- Place the oysters onto a plate or serving platter and serve right away.
Useful Information
Can it be frozen? No.
Can it be prepared in advance? No.
Will leftovers be nice? NO!!! Do NOT eat leftover oysters!!!
Notes
- As with any seafood, you must make sure the oysters are very fresh and they must still be alive.
- The lemon and basil in the pesto really compliments the flavour of the oysters without masking it.
