This is a quick and easy dish, ideal for for a week day dinner.
Ingredients
- 3 × 100g lamb chops per person
- 2 tablespoons of vegetable oil
- 5g unsalted butter
Preparation Time: 10 seconds
Cooking Time: 5 - 6 minutes
Serves: Depends on initial quantity
Method
- Season the lamb chops with salt & pepper.
- Heat the oil and butter in a frying pan over a medium heat.
- When the butter has stopped fizzing, put the lamb chops into the pan and fry them according to the following table:
Cookedness Time for side 1 Time for side 2 Blue 48s 32s Rare 1m 30s 1m 0s Medium-Rare 2m 05s 1m 25s Medium 2m 35s 1m 40s Medium-Well 3m 0s 2m 0s Well-done 3m 20s 2m 15s - This assumes the lamb chops are about 1½cm thick. If they are not, you may have to slightly adjust the cooking times.
- Remove the chops from the pan and allow them to rest for 5 minutes.
- Serve. We served it with potato dauphinoise, provençal green beans and a lamb pan sauce.
