Thai Noodle Broth

This is a really quick and really simple dish that works well on its own or as an accompaniment to another spicy dish.
Ingredients
- 15g coriander
- ½ red chilli
- 1 clove garlic
- 2 spring onions
- 30g noodles (uncooked weight) per person
- ½ teaspoon Thai fish sauce
- 1 tablespoon soy sauce
- a few drops of Tabasco
- 1 teaspoon sugar
- 1 tablespoon rice (or white) wine vinegar
- 1 tablespoon sesame oil
- 500ml chicken stock
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2
Method
- Finely chop the garlic and red chilli and roughly chop the coriander. Slice the spring onion and put to one side.
- In a saucepan over a medium heat, pour in the sesame oil and fry the garlic, chilli and ¾ of the coriander for 1 minute.
- Add all the liquids in to the pan and bring it up to the boil.
- Add in the noodles, turn the temperature down so that the liquid is at a simmer and cook the noodles for about 3 minutes until they are soft and tender. Then put in the spring onions and stir them around.
- Bring the liquid up to the boil to heat the spring onions and then serve, garnishing it with the remaining coriander.
