Roasted Spiced Squash

You often see these odd looking, oddly shaped vegetables in super markets and farmers markets, and you probably walk straight past them. They are, in fact, tremendously healthy with have a wonderfully fragrant, buttery flavour and a smooth soft texture that greatly benefits from roasting.
Ingredients
- 1 × 800g squash
- 1 teaspoon cumin seeds
- ½ teaspoon ground cinnamon
- ½ teaspoon ground coriander
- 1 teaspoon dried oregano
- 3 tablespoons olive oil
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves: 3 - 4
Method
- Heat the oven to 220°c.
- Cut the squash in half, spoon out all the seeds and then cut the squash into about 3cm slices.
- Put the slices of squash into a large oven proof dish, then sprinkle, drizzle or dust all the other ingredients over the squash. Then season it with salt & pepper.
- Using your hands, toss the slices of squash with everything else so that they are evenly coated in the oil and spices.
- Put the dish into the oven for 25 minutes.
- Take the squash out of the oven and serve.
Useful Information
Can it be frozen? No.
Can it be prepared in advance? Yes, to stage 4 up to 1 day in advance.
Will leftovers be nice? Yes, if you turn them into soup, for up to 3 days.
Notes
- For an easier to eat but not as good looking alternative, you can peel the squash and chop it into cubes before roasting.
