These light and crisp potatoes are delicious with a whole rage of dishes like roast game or poached fish. They are quick and easy to make and have the same characteristics as normal roast potatoes but in half the time!

Ingredients

Preparation Time: 25 minutes
Cooking Time: 10 minutes boiling and 10 minutes frying
Serves: as many as you like

Method

  1. Peel the potatoes and cut them into roughly 2cm pieces. the peeled, chopped potatoes
  2. Boil the potato pieces in water for 10 minutes until they are soft around the edges.
  3. Drain the water and let them steam for about 1 minute. Place the lid on the pan and holding the lid securely, shake the potatoes until they are all roughed up around the edges. the boiled, roughened potatoes
  4. In a frying pan add the oil and heat it over a medium heat. Carefully place the potatoes into the hot oil and fry them for about 10 minutes, turning the potato pieces every now and then. the potatoes frying in the pan
  5. When they are crisp and golden brown, remove them from the pan and place them onto kitchen paper to drain off the excess fat. Then season them with salt and serve immediately. the finished pan-fried potatoes

Can it be prepared in advance? No, well you could peel and chop the poatoes and keep them in cold water, but what’s the point.
