An all time classic originating from the Middle East, this almond and sugar dough can be used for lining cakes or making models of fruit and animals as decorations.
Ingredients
- 200g icing sugar
- 350g ground almonds
- 2 egg whites
- ½ teaspoon vanilla extract or essence
- 1 teaspoon lemon juice
Preparation Time: 10 minutes + 30 minutes chilling

Method
- Sieve the icing sugar and ground almonds into a large bowl. Then add in the egg whites, vanilla extract and lemon juice.
- Stir the ingredients together to form a dough and, using your hand, form it into a ball.
- Tip the contents of the bowl onto the worktop and gently knead the ball for about 30 seconds (try not to over work the dough or it will become greasy as the oils in the ground almonds are released into the mix).
- Press the dough into a disk shape between two sheets of cling film/plastic wrap, wrap it tightly and place it in the fridge for 30 minutes before use.
- Use as required.
