Warm Oriental Salad

This colourful and simple dish is a perfect accompaniment for any light meal. The vegetables are cooked quickly which helps them retain their natural crispness and flavour.
Ingredients
- 80g bean sprouts
- 120g bamboo shoots
- 125g courgette (1)
- 55g spring onion (2)
- 150g red pepper (1½)
- 5g chilli (½)
- 2 teaspoons of sesame seeds
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Serves: 4
Method
- Remove the stalk, seeds and pith from the red pepper and the chilli. Cut the red pepper, spring onion and courgette into long, thin strips. Cut the chilli into short, thin strips.
- Heat the vegetable oil in a frying pan or, preferably, a wok over a medium heat. When the oil is hot, put in all the ingredients except for the sesame oil and the sesame seeds.
- Toss or stir the vegetables in the pan for about 3-5 minutes, until they are beginning to turn soft.
- Put in the sesame oil and sesame seeds, stir them through the vegetables and season it with salt & pepper.
- Serve.

Can it be frozen? No.
Can it be prepared in advance? Yes, to step 1 up to 1 day in advance.
Will leftovers be nice? Not really.
